Ingredients
For the Stir-Fry
- 340 g luncheon meat (1 can), diced
- 300 g potatoes, peeled and diced
- 10 g garlic, minced
- 70 g onion, chopped
- Cooking oil, enough for frying
- Salt, to taste
- Ground black pepper, to taste
- Spring onions, chopped, for garnish
For the Sauce
- 60 g banana ketchup (about 4 Tbsp)
- 30 ml mirin (2 Tbsp)
- 15 g chili garlic sauce (about 1 Tbsp), optional
- 60 ml water (¼ cup)
How to Make It
- Peel and dice the potatoes into small, even pieces. Rinse, drain thoroughly, and pat dry.
- Dice the luncheon meat, mince the garlic, and chop the onion.
- Mix the banana ketchup, mirin, optional chili garlic sauce, and water in a small bowl. Set aside.
- Heat cooking oil in a wide pan over medium heat. Fry the potatoes until golden and tender inside, then remove and drain.
- Fry the luncheon meat until lightly browned on the edges. Remove and drain.
- Carefully remove the excess oil, leaving about 1 Tbsp in the pan.
- Sauté the garlic briefly until fragrant, then add the onion and cook until softened.
- Pour in the prepared sauce. Bring to a gentle simmer and cook until slightly thickened.
- Return the fried luncheon meat and potatoes. Toss gently until evenly coated and heated through.
- Taste before adding salt, then adjust with salt and ground black pepper as needed. Garnish with chopped spring onions and serve hot.
Kubo Tips
- Cut the potatoes into similar sizes so they cook evenly.
- Drain and dry the potatoes thoroughly before frying.
- Fry the potatoes and luncheon meat separately so each can brown properly.
- Keep the heat moderate after adding the sauce because the ketchup can scorch.
- Toss the fried ingredients with the sauce just before serving to preserve more of their browned texture.
- Taste before adding salt because luncheon meat and banana ketchup already contain seasoning.
- The chili garlic sauce is optional; leave it out if you prefer a milder dish.
