Ingredients
- 2 packs instant pancit canton, including seasoning sachets (Sweet & Spicy used here)
- Water, enough to boil the noodles
- 28 g butter (2 Tbsp), divided
- 5 cloves garlic, minced (about 25 g)
- 2–3 Tbsp Japanese mayonnaise
- Reserved noodle cooking water, as needed
- Crispy fried garlic, for topping
How to Make It
- Bring a pot of water to a boil.
- Add the noodles and cook for about 2 minutes, separating them gently. Keep them slightly firm since they will finish cooking in the pan.
- Reserve some cooking water, then drain the noodles.
- Melt half the butter in a pan over medium-low heat.
- Add the minced garlic and sauté until fragrant and lightly golden, without letting it burn.
- Carefully add a splash of the reserved noodle cooking water.
- Add the drained noodles, remaining butter, and Japanese mayonnaise.
- Add the seasoning sachets from both packs.
- Toss over low heat for 30–60 seconds, until evenly coated and the noodles reach your preferred texture.
- Add a little more reserved cooking water if the sauce becomes too thick.
- Transfer to serving plates, top with crispy fried garlic, and serve immediately.
Kubo Tips
- Sweet & Spicy pancit canton is used in this recipe, but you can try another flavor.
- Keep the noodles slightly firm when boiling so they do not become too soft during tossing.
- Reserve the cooking water before draining. Add it a little at a time to loosen the sauce.
- Use gentle heat when cooking the garlic because butter and garlic can burn quickly.
- Start with 2 Tbsp mayonnaise and add the third tablespoon if you prefer a creamier coating.
- For a less salty result, add the seasoning powder gradually and taste before using all of it.
- Serve immediately while the noodles are loose and the sauce is creamy.
