Ingredients
- 10 pieces Lemon Square Cheesecake cupcakes
- 57 g butter (¼ cup), melted and cooled
- 500 ml all-purpose cream, thoroughly chilled
- 100 g white sugar (½ cup)
- 50 g cheddar cheese, grated
- Additional grated cheese, for serving, optional
Special Equipment
- Electric Hand Mixer
How to Make It
- Unwrap the cupcakes and remove the paper liners.
- Scrape any cake crumbs from the liners into a small bowl and reserve for the topping.
- Crumble the cupcakes finely in a large bowl.
- Add the melted, cooled butter and mix thoroughly.
- Divide the buttery crumbs into two equal portions.
- Pour the chilled all-purpose cream into a separate mixing bowl.
- Whip until fluffy and noticeably increased in volume.
- Gradually add the sugar while beating, then continue until incorporated.
- Gently fold in the grated cheese.
- Press one portion of the buttery crumbs evenly into the bottom of a freezer-safe container.
- Spread the whipped cream mixture over the crumb base.
- Scatter the remaining buttery crumbs and reserved cake crumbs evenly over the filling.
- Cover tightly and freeze for at least 6 hours, or until firm.
- Let soften briefly if needed, then cut into portions and serve with additional grated cheese, if desired.
Kubo Tips
- Chill the cream thoroughly before whipping. A chilled bowl and beaters can also help.
- Let the melted butter cool before mixing it with the cake crumbs.
- Crumble the cupcakes evenly so the base holds together more consistently.
- Use fine white sugar and add it gradually to help it dissolve into the cream.
- Fold in the cheese gently to keep the filling airy.
- Freezing time depends on your freezer and the depth of the container.
- Keep covered in the freezer to protect the cake from drying out and absorbing odors.
- Let the cake soften just enough to slice, keeping the remaining portions frozen.
