Ingredients
- 165 g processed cheddar cheese, cut into 20 small sticks
- 20 siomai wrappers
- 1 Tbsp white sugar, for the sweetened version
- Water, for sealing
- Cooking oil, enough for frying
- Dipping sauce of choice, for serving, optional
How to Make It
- Cut the cheese into 20 small sticks, sized to fit inside the siomai wrappers.
- For the plain version, place a cheese stick near one corner of a siomai wrapper.
- Fold the corner over the cheese, fold in both sides, and roll snugly.
- Moisten the final edge with a little water and press to seal.
- Repeat to make 10 plain cheese sticks.
- For the sweetened version, lightly coat the remaining cheese sticks in the sugar.
- Wrap and seal them using the same method.
- Heat enough cooking oil for frying to about 170°C.
- Fry in small batches for about 1–2 minutes, turning as needed, until the wrappers are golden and crisp.
- Remove promptly before the cheese begins to leak out.
- Drain on a wire rack and let cool briefly before serving with your preferred dipping sauce.
Kubo Tips
- Use processed cheddar for the familiar Filipino cheese-stick flavor.
- Cut the cheese small enough to leave room for folding and sealing the siomai wrappers.
- Keep unused wrappers covered so they do not dry out and crack.
- Fold in both ends and seal the final edge well to help keep the cheese inside.
- Use only a light coating of sugar for the sweetened version.
- Fry without overcrowding the pan and remove the sticks as soon as the wrappers turn golden.
- Let them cool briefly before eating because the cheese filling will be very hot.
