Ingredients

For the Vitamilk Base

  • 900–1200 ml Vitamilk Original soy milk (3–4 bottles, 300 ml each)
  • 25 g unflavored white gulaman powder (1 packet)

For the Sago

  • ½ cup dried mini sago or tapioca pearls
  • 1.5 L water, plus more as needed
  • Water, for rinsing

For the Arnibal

  • 220 g brown sugar (1 cup)
  • 240 ml water (1 cup)

How to Make It

Prepare the Vitamilk base

  1. Pour the Vitamilk into a saucepan.
  2. Gradually sprinkle in the gulaman powder while whisking to distribute it evenly.
  3. Heat while stirring constantly, scraping the bottom to prevent scorching.
  4. Bring to a gentle boil and cook according to the powder’s packet directions, until fully dissolved.
  5. Remove from the heat and strain into a heatproof bowl or container.
  6. Skim off any foam.
  7. Leave undisturbed until cooled and set, allowing approximately 1 hour depending on the container’s depth.

Cook the sago

  1. Bring 1.5 L water to a boil.
  2. Add the dried mini sago and stir gently to prevent sticking.
  3. Cook over medium heat for about 20 minutes, stirring occasionally and adding water if needed. Follow the package directions if they differ.
  4. Turn off the heat, cover, and let stand for 10 minutes.
  5. Check that the pearls are translucent and tender. Cook a little longer if the centers remain firm.
  6. Drain, rinse with clean water, and drain again.

Make the arnibal

  1. Combine the brown sugar and water in a saucepan.
  2. Heat while stirring until the sugar dissolves.
  3. Bring to a gentle simmer and cook for about 3–5 minutes, until slightly syrupy.
  4. Stir a little of the prepared arnibal into the cooked sago to help keep the pearls separate.

Assemble

  1. Scoop thin layers of the set Vitamilk base into serving glasses.
  2. Add spoonfuls of sago and drizzle with arnibal to taste.
  3. Repeat the layers as desired and serve.
Kubo Tips
  • Use unflavored white gulaman powder to keep the soy milk’s flavor and appearance.
  • Four bottles of Vitamilk will give a softer set than three bottles when using the same packet of powder.
  • Follow the directions for your gulaman powder; it needs proper heating to dissolve and set.
  • Stir the soy milk mixture constantly while heating to prevent scorching.
  • Sago cooking times vary by brand and size, so check the pearls rather than relying only on the timer.
  • Add the arnibal gradually because Vitamilk is already sweetened.
