Ingredients

  • 10–15 fresh blue ternate or butterfly pea flowers
  • 500 ml water (about 2 cups)
  • Honey, to taste

How to Make It

  1. Rinse the fresh butterfly pea flowers gently under clean water.
  2. Place the flowers and water in a small pot.
  3. Cover the pot and bring the water to a boil.
  4. Once boiling, turn off the heat.
  5. Let the flowers steep for about 5 minutes, or until the tea develops a deep blue color.
  6. Strain the tea into cups.
  7. Add honey to taste while the tea is still warm.
  8. Stir well and serve.
Kubo Tips
  • Use closer to 10 flowers for a lighter tea or 15 flowers for a deeper blue color.
  • Turn off the heat once the water boils and let the flowers finish steeping off the heat.
  • Add the honey after straining so you can adjust the sweetness easily.
  • For iced tea, let the strained tea cool before serving it over ice.
  • Adding calamansi or lemon will give the tea a tart flavor and change its color from blue toward purple
