Ingredients
- 10–15 fresh blue ternate or butterfly pea flowers
- 500 ml water (about 2 cups)
- Honey, to taste
How to Make It
- Rinse the fresh butterfly pea flowers gently under clean water.
- Place the flowers and water in a small pot.
- Cover the pot and bring the water to a boil.
- Once boiling, turn off the heat.
- Let the flowers steep for about 5 minutes, or until the tea develops a deep blue color.
- Strain the tea into cups.
- Add honey to taste while the tea is still warm.
- Stir well and serve.
Kubo Tips
- Use closer to 10 flowers for a lighter tea or 15 flowers for a deeper blue color.
- Turn off the heat once the water boils and let the flowers finish steeping off the heat.
- Add the honey after straining so you can adjust the sweetness easily.
- For iced tea, let the strained tea cool before serving it over ice.
- Adding calamansi or lemon will give the tea a tart flavor and change its color from blue toward purple
