Ingredients
For the Taho
- 32 g Instant soft tofu powder (1 small sachet)
- 180 ml hot water, or the amount specified on the packet
For the Sago
- 15 g dry small sago pearls
- Water, enough for boiling and rinsing
For the Arnibal
- 25 g brown sugar
- 25 ml water
How to Make It
- Empty the instant soft tofu powder into a heatproof bowl or cup.
- Add the hot water according to the packet directions. For Soyspring, use water above 90°C and stir quickly in one direction for about 6 seconds, until dissolved.
- Leave undisturbed for 15–20 minutes, or until set. Do not stir again while it sets.
- Meanwhile, bring a pot of water to a boil. Add the small sago pearls and cook according to the package directions, stirring occasionally, until translucent and tender.
- Drain the pearls, rinse with clean water, and drain again.
- Combine the brown sugar and 25 ml water in a small saucepan. Bring to a gentle simmer and cook until the sugar dissolves and the syrup thickens slightly.
- Stir a little syrup into the cooked pearls to help keep them separate.
- Spoon the soft tofu into a serving glass or bowl. Add the sago and arnibal to taste, then serve warm.
Kubo Tips
- Use instant soft tofu powder intended for making tofu pudding. Plain soy milk powder will not set the same way.
- Follow the water ratio and temperature on your packet so the tofu sets properly.
- After the initial mixing, leave the tofu undisturbed until set.
- Sago cooking times vary by size and brand. Check that the pearls are tender rather than relying only on the clock.
- The syrup thickens as it cools. Add a little water if it becomes too thick.
- Prepare the sago and arnibal while the tofu sets to shorten the overall preparation time.
